Corn/Peach Salad
My cousin and best friend introduced me to this recipe years ago! It has all the flavors of summer, from the grilled corn to the ripe peaches. Basil always has a very light, outdoorsy taste so I like to throw it into almost every summer dish. It’s so simple, plus it can sit out at room temperature and is such a crowd-pleaser.
Ingredients:
2 ears of corn
2 peaches
6 oz. of Mozzarella cheese (or other preferred mild white cheese)
1/4 cup chopped basil
2 tablespoons olive oil
sea salt and black pepper to taste
Directions:
- Boil or grill 2 ears of corn, then cut kernels off and place them into a bowl.
- Dice the peaches (with skin) and add them to the bowl.
- Cut cheese into small cubes and add.
- Mix in basil, olive oil, sea salt and black pepper.
